I've got willis, bishop, Poz and Laurinitis.  Playing willis and bishop not sure if I should go Poz or Mr. Buckeye?

Go with Posluszny. Laurinaitis plays at home which means he won't be awarded with any assists and his matchup isn't that great.

my first season with idp's so this may be a dumb question, but is that pretty common and well-known that when you play at home you get less assists credited to you?  and what do you think of Levy going forward?  Does Follet's injury impact Levy's value?

Scorekeeping on the defensive side of the ball is highly subjective. The St. Louis scorekeeper in particular is notoriously stingy with awarding assists. With this being said, I wouldn't expect Rams or Panthers IDPs to have many assists.
